Assistant Executive Steward

GENERAL SUMMARY
Manage Steward Department Supervisors and Kitchen Workers. Assist the Executive Steward in all phases of the department operations. Ensure operations follow Health, Safety and Occupational Safety and Health Administration regulations. Train Supervisors and employees in the performance of their duties. Oversee the breakdown, feed, catches, and sorts of all dishes and flatware as it is brought to the dish area. Oversee wall washing, ceilings, baseboards, floor drains, hand sinks, tables and cutting boards. Assign tasks and breaks, delegate responsibilities to employees and ensure that all tasks are completed correctly and on time


FOUR DIAMOND SERVICE AGREEMENT
All Team Members will display a Four Diamond commitment to Customer Service through the delivery and maintenance of the Quality Standards established by Pechanga Resort and Casino.


KEY RESPONSIBILITIES
•Delegate tasks to department and ensure job requirements are completed correctly and in a timely manner
•Review Kitchen and Restaurant service needs from Stewarding throughout the shift and ensure that all requirements are met according to specifications
•Conduct inventory of food and beverage outlets monthly
•Ensure wash, sort and store pots in their proper location on shelves
•Maintain employee records, attendance tracking , checklist and daily reports
•Make routine inspections off all equipment and kitchen areas to ensure that cleanliness and sanitary procedures are maintained and to ensure all equipment is in proper place and working condition
•Maintain close communication with F&B Managers, working to supply their equipment
•Ensure assigned staff has reported to work, documenting any late or absent employees
•Ensure that all items are stored in accordance with State/Local Health and Fire Departments regulations and according to Hotel requirements
•Reviews labor on a daily basis on payroll system
•Other duties as assigned


ACCOUNTABILITY: This Assistant Executive Steward has supervisory responsibilities including departmental corrective action, terminations and team member relation issues.


EXPERIENCE/TRAINING/EDUCATION: A High school diploma or general education degree (GED); and two years experience in supervisory capacity or four years of similar work experience or equivalent combination of education and experience is required to successfully perform this job.


COMMUNICATION SKILLS: This position requires the ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. This position also requires the ability to write routine reports and correspondence. Furthermore, this position also requires the ability to speak effectively before groups of customers or employees of the organization.


MATHEMATICAL SKILLS: This position requires the ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. This position also requires the ability to compute rate, ratio, and percent and to draw and interpret bar graphs.


REASONING ABILITY: This position requires the ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. This position also requires the ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.


CERTIFICATES, LICENSES, REGISTRATIONS:
•Qualify to obtain a gaming license.


SKILLS/ABILITIES:
•Working knowledge of Microsoft Word, Excel, Outlook and the Internet
•Working knowledge of Kronos or Timeworks
•Working knowledge of AS/400


OTHER QUALIFICATIONS:
•Strong working knowledge of all Kitchen Steward functions and of all cleaning materials and equipment used
•Effective listening abilities and ability to make strong judgment calls
•Proven ability to work in a fast-paced environment
•Ability to work varied shifts, including weekends and holidays
•Excellent written, communication and interpersonal skills
•Professional appearance and demeanor
•Anticipate guests’ needs, respond promptly and acknowledge all guests, however busy
