Job Title: Food & Beverage Director at Talking Stick Resort
Department: Food & Beverage
Reports To: Senior Director of Hospitality

Summary
Directs and coordinates activities of food and beverage functions as they relate to multi-outlet food service profit centers of the casino. Oversees all functions including food preparation, food service and beverage service and maintains established operational standards while maximizing profits. Provides hands-on, fully involved leadership skills to supervise and motivate a wide range of food and beverage personnel, prepares and maintains budgets.

Supervisory Responsibilities
Manages the Executive Chef and the Food & Beverage Manager who manage employees in the Food & Beverage Department. Responsible for the overall direction, coordination, and evaluation of these units.

Education and/or Experience
High School Diploma or general education degree (GED) required; College degree (BA/BS or AA); 7 years experience in a high volume F&B environment; casino experience preferred; experience in multi-unit/multi-outlet food service profit centers and knowledge of casual, upscale and fine dining required; 5 years management experience required; must have culinary training or culinary experience, at the "Chef" level, as well as knowledge of wines and service standards; or equivalent combination of education, training and experience. Knowledge of Arizona State Liquor Laws - Title 4 and/or Arizona Alcohol Awareness certification required.

Certificates, Licenses, Registrations
Must possess a Maricopa County Food Handlers Card. Must possess ServSafe® Certification at the Manager level.

Computer Skills
To perform this job successfully, an individual should have excellent PC skills and have knowledge of Internet software, MS Office and MS Excel.

Other Qualifications
Must have the proven ability to manage several millions of dollars in volume. Must have strong budgetary, projection and cost control skills, as well as strong organizational and time management skills. Must have strong communication, supervisory and customer service skills.

Language Skills
Must be able to read, write, speak and understand English.

Physical Demands
While performing the duties of this job, the employee is regularly required to use hands and fingers to handle, or feel; reach with hands and arms; talk or hear and taste or smell. The employee is frequently required to stand for prolonged periods of time; walk; climb or balance and stoop, kneel, crouch, or crawl. The employee must frequently lift and/or move up to 25 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.

Work Environment
While performing the duties of this Job, the employee is regularly exposed to wet and/or humid conditions; moving mechanical parts; secondary smoke; extreme cold; extreme heat and risk of electrical shock. The noise level in the work environment is usually moderate to loud.
